Tuna Pasta Puttanesca

Looking for an easy but delicious weeknight meal that is quick and easy to put together? Look no further! This traditional pasta dish was designed to lure people in by it's amazing aroma.
Ingredients:
- Salt to taste
- 3 tablespoons olive oil
- 3 or more cloves of garlic, lightly smashed and peeled
- 3 or more anchovies
- 1 28 oz can of san marzano tomatoes
- Freshly ground black pepper to taste
- 1/2 cup of pitted black olives
- 2 tablespoons capers
- crushed red pepper flakes to taste
- 1 pound linguine (or other long pasta)
- 1 tin of Fish Wives albacore tuna in oil
Cooking Steps:
- Bring pot of water to boil and salt it.
- In a large sauce pan warm two tablespoons of olive oil with garlic and anchovies on medium low heat. Stir occasionally until garlic is lightly golden.
- Add the can of san marzano tomatoes to the sauce pan and crush the tomatoes. Then add some salt and pepper and raise heat to medium high heat. Stir occasionally until the tomatoes break down and mixture becomes saucy (roughly 10 minutes).
- Stir in olives, red pepper flakes, capers and tuna (drain tuna from olive oil before adding) and stir.
- When the pot of water boils add in pasta and cook until al dente.
- Add a splash of pasta water to the sauce and remove pasta from the pot and add into the sauce pan and mix.
- garnish with parsley.
