Iberico Secreto Recipe

If you are not familiar with Iberico pork, it is a breed of pig from Spain who's diet is primarily acorns. Iberico pork is often referred to as the "Wagyu of Pork". The Secreto is often called "butcher's secret" and is a cut located between the shoulder and the loin.
For this simple recipe we start by marinading the Secreto for a few hours in some Mojo marinade.
Then we grill it on a medium high heat until the internal temp reaches 145 degrees internal. If you want some added flavor you can drizzle some Salmuera on the Secreto while cooking (recipe below).
We then remove from the heat and let it rest for a few minutes before cutting into it.
You can easily top this with a chimichurri sauce.
Salmuera Recipe: In a glass jar add:
- 1 finger worth of salt
- A few black peppercorns
- A few cloves of garlic
- A couple sprigs of rosemary
- A tablespoon of olive oil
- Fill the rest with hot (close to boiling water)
Let the Salmuera cool and the flavors to combine before using.
