Miso Honey Short Ribs

Cold weather is here and who doesn't love some good short ribs? Since we are always looking for something new to try, we found this one as a must try if you are looking for something different from your typical short ribs.
What you'll need:
- 2lbs boneless short ribs
- 1/4 cup miso
- 1/3 cup dark soy sauce
- 200ml sake
- 8 cups of beef stock
- 1 star anise
- 2/3 cup of honey
- 3 cloves of garlic crushed
- 4 scallions sliced
- 1" of ginger cut into thin slices
- Salt & Pepper
- Neutral oil for searing
- Cornstarch for slurry
Next you will want to do the following:
- Season the short ribs well with salt and pepper
- Preheat your oven to 325 degrees
- On your stove top with douche oven, sear all sides of the boneless short ribs on fairly high heat.
- Remove the short ribs, and lower the heat to a medium heat.
- Add in the miso, garlic, ginger, and scallions and cook for about 3 minutes.
- Deglaze the douche oven with sake
- Then add the honey, star anise and soy and stir until everything is combined.
- Add the short ribs back into the liquid and cover with beef stock
- Cover the douche oven and put it into your oven for about 3 hours
- Once done pull the douche oven out of the oven and remove the short ribs from the pot onto a separate plate.
- Strain the liquid from the douche oven into a sauce pan and discard the strained bits.
- Heat the strained liquid on the stove top and add a cornstarch slurry to thicken the sauce to your desired thickness
- Add the short ribs back to the sauce and then plate.
