Many people ask what is a Picanha. A Picanha is a sirloin cap, which is the very top part of a top sirloin. This prized Brazilian cut is flavorful and tender, characterized by a thick flavorful fat cap. This fat cap renders down in cooking creating a rich juicy steak. 

There are several ways to go about cooking a Picanha, and none of them are wrong. Some people cook them whole, either smoking them or grilling them, while others cut them into individual steaks, also referred to as Coulotte steaks. Many have probably seen that Brazilian steak house ads with these steaks on a large skewer in a letter "C". However they can also be cooked just like any ordinary steak as well.
