When we break down a chuck roll from a cow there are several different cuts that we are able to get out of this large primal. One of those cuts on the top side is a chuck eye steak.
These amazing cuts are very versatile. They are full of marbling and fat, like that of a ribeye and grill up very similarly to a ribeye. They call this steak the "poor man's ribeye" for a reason. Though they don't have the spinalis that a ribeye has, it is still very juicy, tender and rich of beef flavor.
Personally we love to marinade them in a good steak marinade and grill them to an internal temperature of 130 degrees. However you can defiantly cut these steaks up for stews, slow cook them as a small roast and more!
